Sweet Mint + Cream Cold Brew

I am in a deeply committed relationship with coffee these days. Especially as the days get warmer my love for cold brew + iced coffee grows stronger and stronger. Even though I'm waking up extra early these days for those morning nursing sessions, it's not quite as easy as it once was to pop in the car and hit the Starbucks drive thru. So today I was inspired to create my own sweet + creamy treat that I can make at home any time of day and I wanted to share it with you!



what you'll need:

  • 8 oz cold brew concentrate
  • mint simple syrup
  • sweet condensed milk
  • ice
  • fresh mint for garnish
For the cold brew concentrate, you can either buy it premade from the store or it's super easy to make your own. Working to roughly a 1:8 coffee-to-water ratio, place your grounds in the bottom of the jar, and cover with cold water. Stir gently until well combined, then cover and leave to steep for 18-24 hours, either in or out of the fridge. When brewed, strain into a large bowl through a sieve to remove the larger grounds.

For the mint simple syrup, you can buy it at Williams Sonoma like I do - here's my favorite or you can make it in just a few minutes with mint leaves, sugar + water! Just chop your mint and in a saucepan bring sugar, water and mint to a boil, stirring until sugar is dissolved. Simmer syrup, undisturbed, 2 minutes. Pour syrup through a fine sieve, pressing hard on solids, and cool.



Now for the recipe!

  1. In a glass add a handful of ice cubes
  2. Pour 2 TBSP of mint simple syrup over the ice
  3. Add 8 oz of cold brew concentrate
  4. Pour 2 TBSP condensed milk over the top + stir to combine
  5. Garnish with fresh mint + enjoy!
