Savory Cornbread 'Whoopie Pies' w/ Goat Cheese + Bacon Filling

I had the flu last week, which meant I spent about 3 straight days watching the Food Network and doing nothing else. I can't remember exactly which show (probably my boyfriend, Bobby Flay) inspired me to come up with a savory whoopie pie, but oh my goodness am I glad I did. These may be one of my favorite things I've ever made, I already can't wait to make them again.

What you'll need

  • 2 C flour
  • 1 C cornmeal
  • 2 TSP baking soda
  • 1/4 C brown sugar
  • 1 C buttermilk
  • 4 TBSP butter
  • 1 egg
  • 1 jalapeño, seeded + diced
  • 4 oz goat cheese
  • 4 oz cream cheese
  • 1 TBSP milk
  • 3 slices of bacon, crisp + crumbled
  • 1 TBSP fresh chives, chopped

Step 1

Preheat your oven to 375 degrees. Spray a cookie sheet with non-stick cooking spray

Step 2

In a mixer, combine your flour, cornmeal, baking soda + brown sugar. 

Step 3

Add the buttermilk, egg + butter to your mixer until combined. Gently fold in your jalapeño.

Step 4

Drop rounded tablespoons on your cookie sheet + bake for 15 minutes (until light brown around the edges). Remove from the oven + allow to cool completely. 

Step 5

In a bowl, combine your cream cheese, goat cheese, milk + chives. Fold in your bacon crumbles. 

Step 6

Spread your filling onto one half of your whoopie pie + top with the remaining half.
