Coffee + Cream Muffins


Ok, yes, I am a pregnant woman who drinks coffee. I can't believe the stigma attached with it! But quite frankly, if my OBGYN says it's ok, I'm really not interested in anyone else's opinion. That being said, this week I decided to have coffee + eat it too! These muffins were a hare-brained scheme that actually turned out incredibly well. They're so light + fluffy and the flavor is amazing. I may or may not have already eaten two since typing this.

What you'll need:

  • 2 C flour
  • 3/4 C sugar
  • 2 1/2 tsp baking powder
  • 1/2 tsp cinnamon
  • 1/2 tsp salt
  • 1 egg, beaten
  • 1/4 C heavy cream
  • 3/4 C cold brew concentrate (I used Chameleon Mocha Cold Brew)
  • 1 tsp vanilla extract
  • 1 C chocolate chunks 

Step 1

Preheat your oven to 375. In a mixing bowl, combine all your dry ingredients with a whisk. 

Step 2

In a mixer, beat your eggs, cream, vanilla + cold brew. Slowly add dry ingredients until combined.

Step 3

Fold in your chocolate chunks, being careful not to overmix. 

Step 4

Fill your muffin tins about 2/3 of the way full. Bake for 18-20 minutes (18 was perfect for me).
