Lavender Bee's Knees

This cocktail idea came to me this past weekend as we sat at brunch at my favorite place, Great Maple. They make the most amazing lavender lemonade, but the brunch queen in me couldn't resist a good Sunday morning mimosa. If only they could have combined the two!

Well, they didn't. So, I did! I decided to take a floral spin on the class libation, "Bee's Knees", which is gin, lemon juice and honey. 

What You'll Need:

1/4 C hot water
1 TSP dried lavender flowers
1/4 C honey
Hendrick's Gin
2 TBSP fresh lemon juice

Mix hot water and dried lavender flowers in a small saucepan. 
Let steep for 5 minutes. 

If you've used raw honey like I did, you'll need to heat it to reach a thinner consistency. 

Whisk honey in with the lavender and water. 
Strain into a bowl. 

Add syrup into cocktail shaker with ice, lemon juice and gin.

Shake and serve!
