Zucchini Noodle + Pork Chow Mein

Happy Chinese New Year! As most of you know, all I wanted for my birthday was two little goats, and that request was denied over and over again. Still devastated. Lo and behold I'm driving down the freeway and I see three giant billboards proclaiming "THE YEAR OF THE GOAT". It's serendipitous, absolutely meant to be. But until I can take pictures of my new goats, here's a healthy version of my favorite chinese food.

What You'll Need:

3 zucchini
1 pound lean ground pork
1 red bell pepper, thinly sliced
3 carrots, julienned
1 yellow onion, finely diced
3 cloves of garlic, minced
3 TBSP soy sauce (I use Tamari for gluten free)
2 TSP rice vinegar
2 TSP hoisin sauce
cilantro for garnishing

First, spiralize your zucchini and set aside to drain

Heat 1 TBSP avocado oil over medium high heat and add onion and garlic.
Cook until soft, about 5 minutes

Add your pork to the pan, crumble, and cook until browned.
Meanwhile, in a small bowl add soy sauce, rice vinegar and hoisin sauce. 

Add bell pepper and carrots to the pan. 
Cook until veggies are tender, about 3 minutes.

Add zoodles and sauce to the pan. 
Cook a couple minutes until zoodles are warm.

Serve up hot and top with cilantro
