Garlic-Lime Pork Chops with Fresh Mango Salsa

I think I have an obsession with my grill pan. I can't stop using it. I jumped the gun a little bit with this recipe, because mangos aren't quite in season yet, but if you let the salsa sit long enough before serving it works great.

What You'll Need

  • Boneless sirloin pork chops
  • 2 limes, juiced
  • 1 TBSP wildflower honey
  • 3 cloves garlic, minced
  • Salt and pepper to taste
  • a good glug of olive oil

Combine all the ingredients in a large bag and add the pork chops. Let marinate for at least an hour, but I prepared them this morning so they sat for a good 8 hours. 

For the salsa

  • 1 large mango, pitted and diced
  • handful of cilantro leaves
  • 1 jalapeno, ribs and seeds removed
  • 1 lime, juiced
  • 1/2 red onion, finely diced
  • Sugar, to taste, if your mangos aren't quite sweet enough yet

Combine jalapeno, onion and cilantro in a food processor until finely chopped. Add to bowl with mango, sugar and lime juice. Let sit for at least 30 minutes so the lime juice has a chance to bring the mango flavor out as much as possible. 

Meanwhile, heat your grill pan (or outside grill) over medium-high heat and cook until nice and seared on each side. I love some hearty grill marks.

Serve with a heaping scoop of mango salsa and fresh mint leaves. So quick and easy!
