Simple Grilled Bruschetta Chicken

I love bruschetta on everything...chicken, toast, and just by itself. It probably stems from my eating tomatoes like apples as a child. I received a really nice cast iron grill pan for Christmas from my mom, so we still get to take advantage of grilling even when it's cold and dark outside. This dish is light, healthy and so quick to make! Throw it on top of a bed of broccoli and call it a day!

What you'll need:

  • Boneless, skinless chicken breasts
  • 3 ripe tomatoes
  • 3 cloves of garlic
  • handful of fresh basil (picked fresh from your herb garden - Basil is the easiest to grow, everyone should have some!)
  • 1 TBSP balsamic vinegar
  • 1 TSP extra virgin olive oil, plus more for the grill pan
Brush a decent amount of olive oil on to the grill pan. Generously season the chicken breasts with salt and pepper and heat the grill over medium-high heat. Grill the chicken until you get those deep brown grill marks and the chicken is opaque throughout. 


Meanwhile, mix together tomatoes, fresh basil, garlic, balsamic vinegar, olive oil and sea salt in a bowl and refrigerate until chicken is done grilling. 


Top the chicken breasts with a nice helping of the tomato mixture and you're all set. See, I told you it was easy!
