Sage & Bacon Sweet Potato Hash

This meal is sweet and savory at the same time. I can't remember the last time I scarfed something down so quickly.

What you'll need:



  • 4 slices bacon, crumbled after cooking
  • 2 diced shallots
  • 1 yellow bell pepper
  • 1 red bell pepper
  • 2 medium sweet potatoes, diced into 1/2 cubes
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons minced sage
  • 2 tablespoons pure maple syrup
  • 1 tablespoon olive oil
  • 2 eggs


  •  In a large cast iron skillet, brown bacon over medium heat.
      
    After bacon has cooked, remove from pan and let drain. Add shallots and sauté for a few minutes.  Add sweet potatoes, salt, and pepper and stir. Continue cooking, stirring occasionally, for 10 to 15 minutes or until sweet potatoes are tender.

    *Don't over stir sweet potatoes. If you leave them be for awhile they get a lovely caramelizing while cooking. 

     About five minutes before sweet potatoes are done, add sage and maple syrup.

    While hash is cooking, heat oil in large non-stick skillet over low heat. Carefully crack eggs into skillet. Continue cooking eggs over low heat until whites are done. If you prefer more well-done eggs, flip them with a spatula and cook for two to three more minutes.


    Divvy up the hash, top with fried egg and enjoy!
